Ready in just 10 minutes, this quick and healthy zoodle recipe is tossed in a savory, Paleo-friendly sauce that’s big on flavor but light on effort. Whether you need a fast weeknight dinner or a fresh low-carb lunch, these Asian zucchini noodles deliver satisfying taste with simple, wholesome ingredients.

Ingredients

¼ cup soy sauce

1 tablespoon dark brown sugar use honey for paleo

1 teaspoon oil

¼ cup minced onion

2 cloves garlic minced

4 large zucchini spiralized

2 boxes of shiitake mushrooms sliced

Preparation

In a small mixing bowl, whisk together soy sauce, sriracha, and brown sugar. Set aside.


In a large skillet, add 1 teaspoon of oil (any type) and onions. Cook the onions for 2 minutes or until they are tender. Then, add the garlic and cook for 30 seconds.


Next, pour the sauce into the skillet and cook for about 1 minute.


Then, add the spiralized zucchini noodles and cook for just 1-2 minutes or until they are fully coated with the sauce. Serve immediately!
