Zucchini Noodles Caprese

About the Recipe

Fresh, light, and bursting with summer flavor, these Zoodles with Cherry Tomatoes & Basil are the perfect way to enjoy a healthy, no-fuss meal. Crisp zucchini noodles are tossed with juicy tomatoes, creamy fresh mozzarella, fragrant basil, and a drizzle of olive oil and balsamic glaze for a dish that feels indulgent yet refreshing. Whether served as a quick lunch, a simple dinner, or a vibrant side, this recipe delivers bright flavors with minimal effort.

Ingredients

2 medium zucchini, spiralized into noodles

1 cup cherry tomatoes, halved

4 ounces fresh mozzarella (pearls or torn pieces)

2 tablespoons extra-virgin olive oil

1–2 tablespoons balsamic glaze (to taste)

¼ cup fresh basil leaves, torn

Salt and freshly cracked black pepper, to taste

Optional: crushed red pepper flakes or grated Parmesan

Preparation

Spiralize the zucchini and lightly pat dry with a paper towel to remove excess moisture.


For slightly softer zoodles, heat a large skillet over medium heat with 1 tablespoon olive oil. Add zoodles and sauté for 1–2 minutes, just until tender. Remove from heat. (Skip this step if you prefer them raw and crisp.)


Transfer zoodles to a large bowl. Add cherry tomatoes, mozzarella, and remaining olive oil.


Drizzle with balsamic glaze, season with salt and pepper, and gently toss to combine.


Sprinkle with fresh basil and optional red pepper flakes or Parmesan. Serve immediately.
