Ingredients

2 slices gluten -free rustic or sourdough bread

1 ripe avocado

2–3 tablespoons sun-dried tomatoes, finely chopped (oil-packed, drained)

1 tablespoon olive oil, plus more for drizzling

1 teaspoon fresh lemon juice

Salt, pepper and garlic to taste


Optional toppings: red pepper flakes, fresh basil, microgreens, or a sprinkle of flaky sea salt

Preparation

Toast the bread slices until golden and crisp. Set aside.


In a small bowl, add the avocado flesh. Mash with a fork until mostly smooth but still slightly chunky.


Stir in the chopped sun-dried tomatoes, olive oil, lemon juice, salt, and black pepper. Taste and adjust seasoning as needed.


Spoon the avocado mixture generously over the toasted bread.


Drizzle lightly with olive oil and add any optional toppings. Serve immediately.
