Ingredients

⅓ cup olive oil

1 teaspoon lemon juice (optional)

Salt and black pepper to taste

Preparation

Add the shamrock leaves, garlic, nuts, and Parmesan cheese to a food processor or blender. Pulse a few times until the ingredients begin to break down.


While the processor is running, slowly drizzle in the olive oil. Blend until the mixture becomes smooth and creamy.


Taste the pesto and add lemon juice if desired for extra brightness. Season with salt and black pepper to taste.


If the pesto is too thick, add a small amount of olive oil and blend again until the desired consistency is reached.


Serve immediately or store in a sealed container in the refrigerator for up to three days. A thin layer of olive oil on top can help keep the pesto fresh and vibrant.
