Ingredients
1 ¼ cups distilled white vinegar
3 tablespoons kosher salt
2 tablespoons sugar
2 cups cold water
6 Kirby cucumbers cut into halves or spears
2 tablespoons coriander seeds
6 large garlic cloves, peeled and halved
1 teaspoon mustard seeds
¼ teaspoon red pepper flakes
16 dill sprigs
Preparation
Combine vinegar, salt, and sugar in a small saucepan and heat it over high heat.
Whisk the mixture until the salt and sugar are completely dissolved.
Transfer the liquid into a bowl and add the cold water. Whisk the mixture again until well combined.
Refrigerate the brine until you’re ready to use it.
Place the cucumbers into two clean 1-quart jars. Divide the 2 tablespoons of coriander seeds, 6 peeled and halved garlic cloves, mustard seeds, red pepper flakes, and 16 dill sprigs evenly among the jars.
Add the chilled brine to the jars, ensuring that the cucumbers are fully submerged. If necessary, add a bit of cold water to the jars until the brine covers the cucumbers completely.
