Ingredients
2 teaspoons unflavored gelatin
4 tablespoons water
1 cups heavy cream, cold
1 can sweetened condensed milk
1 cup passion fruit pulp or unsweetened juice concentrate
2 tablespoons passion fruit liqueur
For the Topping
Pulp of two fresh passion fruits with seeds (about ⅓ cup)
¼ cup sugar
Preparation
In a small bowl, combine the gelatin and water. Stir until the gelatin is fully hydrated.
Microwave for 30 seconds (or heat gently over a double boiler) until melted.Let it cool slightly before using.
In a blender, combine the heavy cream, sweetened condensed milk, passion fruit pulp, and the melted gelatin.Blend on high speed for about 5 minutes, until smooth and well combined.
Pour the mousse into a large serving bowl or divide among 4 individual glasses.Refrigerate for at least 3 hours, or until fully set.
Just before serving, top with passion fruit sauce.
Serve chilled and enjoy!
Topping
In a saucepan, combine the fresh passion fruit pulp and sugar.
Cook over medium-low heat, stirring occasionally, until the sugar has fully dissolved and the mixture begins to boil.
Reduce the heat and simmer for 1–2 more minutes, or until the sauce thickens slightly.
Remove from heat and let the sauce cool to room temperature.Use immediately or refrigerate for later use.
