Ingredients
¼ cup mayonnaise
4 teaspoons of Honey Cup Uniquely Sharp Mustard
4 teaspoons Grey Poupon Country Dijon
4 teaspoons Maille whole grain old style mustard
1 tablespoon honey
¼ teaspoon cayenne
Kosher salt and freshly ground black pepper
2 pounds salmon fillet, with or without skin and either whole or divided into individual portions
Preparation
Preheat the broiler and position the oven rack approximately 6 inches below the broiler element.
In a small bowl, whisk together mayonnaise, mustard, honey, and cayenne pepper.
Season the salmon with salt and pepper. Feel free to adjust the flavor and heat level by adding more cayenne pepper if desired.
Line a rimmed baking sheet with aluminum foil. Lightly season the salmon all over with salt and pepper. Place the salmon on the prepared baking sheet and rub a thin, even layer of the honey-mustard mixture all over its surface and sides.
Broil the salmon until it is browned on top and the internal temperature reaches 115 to 125 degrees Fahrenheit for medium-rare to medium, respectively, in 5 to 15 minutes. (It may be helpful to keep the oven door slightly cracked while the salmon is cooking to prevent the broiler from cycling on and off, although not all ovens function this way.) If the salmon becomes well browned on top before it is cooked through in the center, turn off the broiler and set the oven to 425 degrees Fahrenheit. Continue cooking until the salmon is done, which will take an additional 1 to 2 minutes.
Transfer the salmon to plates or a platter and serve.
