1 ½ cups brown rice flour
1 teaspoon xanthan gum
1 ½ teaspoons yeast
4 teaspoons baking powder
½ teaspoon salt
2 cups water
8 ounces sour cream
Egg Wash:
1 Egg
1 teaspoon water
Toppings (optional):
Sesame seeds
Poppyseeds
Grated Parmesan cheese
Preparation
Egg Wash:
Combine egg white and water and beat with a fork to loosen.
Set aside.
Preheat the oven to 375 degrees Fahrenheit.
In a large bowl, combine all the dry ingredients and whisk them together until well mixed.
Add 8 ounces of sour cream and 2 cups of water to the mixture.
Transfer the dough onto a work surface that has been dusted with tapioca starch.
Gently fold and knead the dough a few times to form a more cohesive consistency.
Shape the dough into a flattened ball, using tapioca starch as needed to prevent it from adhering to your hands and the work surface.
Divide the dough into four equal pieces.
Roll each piece into a log.
Shape the log into a bagel by pressing the ends together.
Place the bagel onto a parchment-lined baking sheet and repeat the process with the remaining dough. Lightly cover the baking sheet with a dry towel to prevent the bagels from drying out.
Brush the bagels thoroughly with egg wash, smoothing out any visible cracks in the dough. Ensure that you brush both the inside and outside edges.
If desired, top the bagels with your preferred toppings.
Bake the bagels in the upper rack of the oven for 25 minutes.
Transfer the bagels to a cooling rack and allow them to cool completely before slicing.
