Ingredients
Apples
2 peeled and cubed apples
1 tablespoon lemon juice
2 tablespoons sugar
2 teaspoons ground cinnamon
Cake
½ cup + 1 tablespoon sweet rice flour
½ cup white rice flour
½ cup + 1 tablespoon tapioca flour
¼ cup brown rice flour
¾ teaspoon xanthan gum
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 stick unsalted butter, room temperature or ½ cup oil
3 eggs
¾ cup granulated sugar
¼ cup brown sugar
¼ cup natural applesauce
½ cup honey
2 teaspoons pure vanilla extract
½ cup apple cider or juice
Glaze
¾ cup sifted confectioner’s sugar
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
2 tablespoons milk of choice
Preparation
Preheat your oven to 350 degrees Fahrenheit.
Prepare the apples
Cube 2 apples and place them in a bowl filled with water and 1 tablespoon of lemon juice.
Stir the mixture, then drain the apples in a colander and transfer them back to the bowl.
In a separate bowl, mix 2 tablespoons of sugar with 2 teaspoons of cinnamon.
Pour the cinnamon-sugar mixture over the apples and stir to coat them evenly.
Prepare the cake batter
In a mixing bowl, combine all the ingredients for the cake.
Pour one-third of the batter into the bottom of the prepared Bundt pan.
Arrange the apple slices on top of the batter.
Pour the remaining batter over the apples to cover them completely.
Bake the cake
Place the Bundt pan in the preheated oven and bake for 40 minutes.
Once the cake is done, remove it from the oven and let it cool completely.
Prepare the glaze
Once the cake is cool, drizzle it with icing.
To make the icing, whisk together ¾ cup of sifted confectioner’s sugar, 1 teaspoon of ground cinnamon, 1 teaspoon of pure vanilla extract, and 2 tablespoons of milk in a small bowl.
