Ingredients

½ cup + 1 tablespoon sweet rice flour

½ cup white rice flour

½ cup + 1 tablespoon tapioca flour

¼ cup brown rice flour

¾ teaspoon xanthan gum

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon kosher salt

1 stick unsalted butter, room temperature or ½ cup oil

¾ cup granulated sugar

¼ cup brown sugar

4 large eggs

2 teaspoons pure vanilla extract

½ cup whole milk, room temperature/ buttermilk

8 ounces sour cream, room temperature

2 teaspoons cinnamon

2 teaspoons ground ginger

¼ teaspoon cloves

½ teaspoon allspice

½ teaspoon nutmeg

3 eggs

¾ cup apple cider

2 tablespoons molasses

2 teaspoon fresh grated ginger


Vanilla Apple Cider Glaze

1 cup confectioner's sugar, sifted

2 tablespoons spiced apple cider

Dash of salt

1 teaspoon vanilla extract

Preparation

Preheat the oven to 350 degrees Fahrenheit and grease a loaf pan.


In a large bowl, whisk together the dry ingredients.


In a medium bowl, combine the grated ginger with the remaining wet ingredients and whisk until well combined.


Combine the wet and dry ingredients in one of the bowls.


Pour the batter into the loaf pan and smooth the top with a spatula. Sprinkle small pieces of candied ginger on top and press them gently into the batter.


Bake for 40 minutes, or until the top springs back when gently pressed or until a toothpick inserted into the center comes out nearly clean.


If the loaf begins to brown before it is fully baked, cover it loosely with foil.


Cool the loaf in the pan for a few minutes, then turn it out onto a plate.


Vanilla Apple Cider Glaze

Sift confectioner's sugar into a medium bowl. Add two tablespoons of spiced apple cider, and whisk until it smooths out.


Whisk in vanilla extract and any spices, if using.


Drizzle over cooled gingerbread loaf.
