Ingredients
1 stick unsalted butter, melted and cooled
⅓ cup confectioners’ sugar
2 tablespoons white rice flour
1 tablespoon brown rice flour
2 ¼ teaspoons tapioca starch
2 ¼ tablespoons potato starch
¼ cup cocoa powder 2 large egg whites
3 large eggs
¾ cup granulated sugar
2 tbsp vanilla extract
½ teaspoon almond extract
¼ cup dark cocoa powder, sifted
1 teaspoon baking powder
Preparation
In a mixing bowl, whisk together eggs and sugar until smooth.
Add melted butter and vanilla extract. Sift together flour, cocoa powder, and baking powder.
Gradually add the dry ingredients to the wet mixture, stirring until a thick dough forms.
Preheat the waffle cone iron.
Lightly coat the griddle with nonstick cooking spray and add 1 rounded tablespoon of dough.
