2 crab legs cooked and shredded 1 ¼ cups
5 ounces Italian cheese
1 cup shredded Parmesan cheese
¼ cup gluten-free Panko crumbs
1 tablespoon Italian seasoning
2 large sweet peppers
½ cup fresh chopped basil divided
4 tablespoons butter
Juice from half a lemon
Preparation
Heat a pan over medium heat and add olive oil.
Sauté the onion for about 5 minutes until it softens.
Add the garlic and cook for another minute until it becomes fragrant.
Allow the mixture to cool and then transfer it to a mixing bowl.
Add the crab meat, cheeses, Panko breadcrumbs, Italian seasoning, and approximately half of the fresh basil. Stir everything together.
Preheat the oven to 350 degrees Fahrenheit.
Slice each sweet pepper in half lengthwise and remove the seeds and membranes.
Fill each pepper with the crab mixture and sprinkle it with dried basil.
Arrange the stuffed peppers on a lightly oiled baking sheet. Bake them in the oven for 20 to 25 minutes.
While the stuffed peppers are baking, melt the butter in a small pot over low heat. Add the lemon juice and the remaining basil to the pot. Stir the mixture until the butter is fully melted and the basil is well incorporated.
Once the stuffed peppers are done baking, drizzle the Lemon-Basil Butter over them and serve.
