2 zucchini
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 red onion
2 cups cooked rice
Chimimchuri
1 cup water
1 tablespoon of salt
1 head of garlic separated into cloves and peeled
1 cup fresh flat leaf parsley leaves
1 cup of fresh oregano leaves
2 teaspoons crushed red pepper flakes
¼ cup red wine vinegar
½ cup olive oil
Preparation
Bring the water to a boil, then add salt and stir until it dissolves.
Let it cool, then mince the garlic, parsley, and oregano.
Mix all the ingredients together.
Rinse the rice in a fine-mesh strainer under cold water until the water runs clear.
Cook the rice according to package directions using water or vegetable broth. You can do this on the stovetop or in a rice cooker. For the stovetop method, bring the liquid to a boil, stir in the rice, reduce heat to a simmer, cover, and cook for about 18 minutes. Turn off the heat and let it rest for 10 minutes with the lid on.
Once the rice is cooked, transfer it to a large bowl.
Grill the vegetables for 8 minutes on medium heat.
Add the grilled vegetables and ½ cup prepared chimichurri sauce.
Toss until all ingredients are thoroughly combined and the rice is evenly coated with the chimichurri.
Season with additional salt and pepper to taste. Serve immediately.
