Ingredients

½ cup extra virgin olive oil

⅓ cup lime juice fresh

⅓ cup white wine vinegar or white vinegar

4 cloves garlic fresh, minced

1 tablespoon  agave nectar or more to taste

One 7 ounce can Chipotle chiles in adobo chiles separated, seeds removed (save adobo sauce)

½ remaining adobo from chipotle chiles

Dash salt kosher

Preparation

Remove the chiles from the can of Chipotles and set aside the remaining adobo sauce.


Remove the seeds from the chiles.


Add the seeded chiles to a food processor or blender.

Add the remaining ingredients: olive oil, white wine vinegar, fresh lime juice, garlic cloves, half of the remaining adobo sauce, and salt.


Blend until the mixture is completely smooth.


Check the saltiness of the mixture.


Add agave nectar and pulse the blender again. Taste the mixture and add more agave nectar if necessary to suit your taste preferences.
