Ingredients

¼ cup sugar

3 mint sprigs

¼ cup water

1 lemon juiced and zested

1 pinch of salt

2 cups of blueberries

3 cups of watermelon cubed

2 tablespoons of chopped mint

Preparation

In a saucepan, bring ¼ cup of sugar and water to a simmer.


Remove from heat, add 3 mint sprigs, and steep for 10 minutes. Discard the mint.


Add the zest and juice of 1 lemon, a pinch of salt, and toss with 2 cups of blueberries and 3 cups of cubed watermelon.


Let stand for 15 minutes.


Garnish with chopped mint.
