Ingredients
½ cup blueberries chopped
1 cup blueberries
2 oranges
1 red onion
2 tablespoons balsamic vinegar
1 tablespoon fresh mint
⅛ teaspoon of salt
Preparation
Coarsely chop ½ cup of blueberries and place them in a bowl.
Add 1 cup of whole blueberries to the bowl.
Zest and remove the white parts of 2 oranges.
Cut sections of the orange and save the juice.
Coarsely chop the orange sections and transfer them, along with the juice, to the bowl with the blueberries.
Stir in a ¼ cup of finely chopped red onion, balsamic vinegar, fresh mint, and salt.
