Ingredients
8 tablespoons unsalted butter, softened
3 tablespoons finely chopped cilantro
4 Fresno or Holland chiles, stemmed, seeded, and finely chopped
2 tablespoons finely grated lime zest
Two 2-Ib. live lobsters
¼ cup extra virgin olive oil
Kosher salt and freshly ground
black pepper
Lime wedges, for serving
Preparation
In a large bowl, combine the cilantro, garlic, salt, black pepper, coriander, cumin, and fennel seed. if using.
Add the fish and toss to coat.
