Ingredients
2 sticks unsalted butter, softened to room temperature
¼ to ½ cup fresh herbs, finely chopped (e.g., parsley, chives, thyme, dill, basil)
¼ to ½ cup edible flowers (petals only), gently rinsed and dried (e.g., pansies, nasturtiums, chive blossoms, violas, calendula)
½ teaspoon flaky sea salt (or to taste)
¼ teaspoon fresh black pepper (or to taste)
Optional: 1 clove minced garlic or 1 teaspoon lemon zest for extra flavor
Preparation
Leave the butter at room temperature until it’s soft enough to mix easily but not melted.
Finely chop your chosen herbs. Gently remove the petals from the edible flowers, discarding any stems or sepals.
In a medium bowl, combine the softened butter, chopped herbs, salt, and black pepper. If you’re using minced garlic or lemon zest, add them to the mixture as well. Mix thoroughly with a fork or spoon until all the ingredients are evenly incorporated.
Gently fold in most of the edible flower petals, being careful not to overmix and bruise them.
Scoop the mixture onto a piece of parchment paper or plastic wrap. Use the paper to help shape the butter into a log or form a mound on a serving dish.
For an elegant presentation, press the remaining flower petals onto the outside of the butter log or over the surface of a butter board. Wrap the log tightly and refrigerate it for at least an hour (or until it’s firm) to allow the flavors to meld together.
