Ingredients
1 cup olive oil
6 chilis, red or green
Preparation
Rinse and pat dry the chilis. Score them lengthwise with the tip of a sharp paring knife.
Place the chilis in a jar, pour in enough oil to cover them completely, and seal the jar with a lid.
Let the chilis infuse for 2-3 weeks. After this period, remove and discard the chilis (or use them immediately if you’re preparing a dish that requires them).
