Blue Cheese Grits

Blue Cheese Grits

About the Recipe

Blue cheese grits are a rich and savory variation of the Southern classic, featuring creamy, slow-cooked corn grits infused with the pungent, earthy, and salty flavor of crumbled blue cheese.
This decadent side dish or main course offers a bold and distinct flavor profile that complements red meat such as steak or pork chops. It is also a popular base for elaborate dishes like buffalo shrimp or crispy grit cakes. The addition of blue cheese transforms a mild comfort food into a flavorful and luxurious experience.

Ingredients

2 cups water

2 cups whole milk

1 teaspoon kosher salt

1 cup quick cooking grits

¼ cup crumbled blue cheese

Preparation

In a medium saucepan, bring water, whole milk, and kosher salt to a gentle boil.

Slowly whisk in the quick-cooking grits and reduce heat to low, stirring frequently until thickened.

Remove from heat and stir in the crumbled blue cheese until creamy and smooth.

Serve the ribs over a generous bed of blue cheese grits with the cranberry sauce spooned on top.
