Exploding Rainbow Cake

An Exploding Rainbow Cake is a fun and dramatic dessert, perfect for parties or celebrations, that combines colorful layers with a surprise "explosion" of candy, sprinkles, or other treats that spill out when the cake is cut.


Ingredients

  • ½ cup + 1 tablespoon sweet rice flour

  • ½ cup white rice flour

  • ½ cup + 1 tablespoon tapioca flour

  • ¼ cup brown rice flour

  • ¾ teaspoon xanthan gum

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon kosher salt

  • 1 stick unsalted butter, room temperature or ½ cup oil

  • 1 cup granulated sugar

  • 4 large eggs

  • 2 teaspoons pure vanilla extract

  • ½ cup whole milk, room temperature/ buttermilk

  • 8 oz sour cream, room temperature


For coloring the cake layers

  • ½ teaspoon Super Red

  • ¼ teaspoon Lemon Yellow

  • ¼ teaspoon Leaf Green

  • ¼ teaspoon Americolor Gel Royal Blue

  • ½ teaspoon Americolor Gel Violet

  • ¼ teaspoon Americolor Gel Orange


Natural Dyes

Red:  1–2 Tbsp beet juice

Orange:  1 Tbsp carrot juice

Yellow:  1 egg yolkGreen:  1 Tbsp spinach juice

Blue:  1+ Tbsp blueberry juice

Purple:  1+ Tbsp blackberry juice


Or


Colors:

red: ½ teaspoon red yeast rice powder + ½ teaspoon red beet powder

orange: ¼ teaspoon red yeast rice powder + ¾ teaspoon golden berry powder

yellow: 1 teaspoon golden berry powder

green: 1 teaspoon matcha powder

blue: 2 teaspoon butterfly pea powder

violet/purple: 1 teaspoon purple sweet potato powder



Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Separate out the batter into 5 bowls.

  3. Add the colors to each bowl

  4. Spray non stick sunflower oil in 5 small cake pans.

  5. Transfer batter into each pan

  6. Preheat oven to 350 degrees

  7. Bake for around 20 minutes


Icing

  • 4 ½ cups of confectioners sugar

  • 2 sticks of unsalted butter

  • 1 stick salted butter

  • 3-4 tablespoons of heavy cream

  • 1 ½ teaspoons of vanilla extract


Instructions

  1. Mix the ingredients together

  2. Separate into small bowls and add colors


To assemble the cake

  1. Take one layer and place on a cake stand

  2. Put a layer of frosting over that layer

  3. For the second layer use a circular cookie cutter and cut a piece out of the center do this for the remainder of the layers except the top piece

  4. Continue to assemble with the pieces of cake icing each layer with the holes lined up.

  5. Before putting the top layer on put your favorite large sprinkles inside the cut out part of the cake

  6. Put the last layer on the cake and ice the cake.

  7. Decorate the cake.
