Garden Cheese is a fresh, fluffy, and utterly irresistible delight that promises to tantalize your taste buds with its unique blend of flavors and textures. Picture a creamy, tangy spread that is not only smooth and luscious but also infused with a vibrant confetti of crisp, garden-fresh vegetables. These vegetables, carefully selected for their freshness and quality, add a delightful crunch and a burst of natural sweetness to the spread. Whether you’re hosting a lively party and need the perfect dip for crackers, looking to add a zesty twist to your sandwiches, or simply craving a satisfyingly simple snack straight from the fridge, Garden Cheese is the ideal choice for any occasion. Its versatility and irresistible taste make it a must-have addition to your culinary repertoire, ensuring that every gathering is a memorable one.

Ingredients

One 10-ounce log fresh goat cheese (chèvre), softened

½ cup edible flowers, stems removed (e.g., pansies, violas, chive flowers, calendula petals, or nasturtium)

2 tablespoons  finely chopped fresh herbs (e.g., parsley, chives, dill, thyme, tarragon)

Flaky sea salt, for sprinkling

Wildflower honey (or a light, floral honey like orange blossom or acacia) for drizzling

Assorted crackers, crostini, or fresh berries for serving 

Preparation

If you prefer a cleaner application, arrange the flowers and herbs between two sheets of wax or parchment paper and press them between heavy books for at least 30 minutes to flatten them.


In a small bowl, combine the softened goat cheese with the chopped fresh herbs and a pinch of flaky sea salt. Mix until the ingredients are well combined.


On a work surface, spread the pressed flowers and herbs in a rough rectangle. Place the cheese log at one end and gently roll it over the flowers, pressing slightly to help them adhere.


Wrap the coated cheese log tightly in plastic wrap and twist the ends. Refrigerate it for at least 30 minutes (or up to overnight) to allow the flavors to meld and the log to firm up.


Once chilled, unwrap the cheese log and place it on a serving platter. Drizzle it generously with honey and sprinkle with a little more flaky sea salt and a few extra flowers for garnish, if desired. Serve it immediately with crackers or bread.
